Cheryl D. Thomas-Peters, RD, is a registered dietitian who writes and lectures on plant-based nutrition. She is the author of the best-selling Quick and Easy Cooking, Fabulous Food for Family and Friends, Choices: Quick and Healthy Cooking, and More Choices for a Healthy, Low-fat You. Her husband, James A. Peters, MD, Dr PH, RD, who authored the Guidelines to Better Health section, is a physician, university professor, and nutrition expert who specializes in preventive medicine.
